Ingredients

  • Lump crab meat (well-drained)
  • Mayonnaise (or Greek yogurt)
  • Dijon mustard
  • Fruit juice or broth (to replace Worcestershire sauce)
  • Beaten egg
  • Breadcrumbs
  • Green onions
  • Red bell pepper
  • Fresh lemon juice
  • Old Bay seasoning
  • Salt and pepper
  • Egg roll wrappers
  • Vegetable oil (for frying)

Instructions

  1. In a mixing bowl, combine lump crab meat, mayonnaise, Dijon mustard, fruit juice or broth, beaten egg, breadcrumbs, green onions, red bell pepper, lemon juice, Old Bay seasoning, salt, and pepper. Mix gently to maintain the texture of the crab.
  2. Lay an egg roll wrapper flat and place about two tablespoons of the filling in the center. Fold the bottom corner over the filling tightly, then fold in both sides toward the center and roll up tightly from bottom to top.
  3. Heat vegetable oil in a skillet over medium-high heat until it reaches 350°F (175°C). Carefully fry the egg rolls until golden brown on all sides—about 3-4 minutes per side.
  4. Remove from oil and drain on paper towels before serving warm with your favorite dipping sauces.
