  • 2 bunches asparagus
  • ¼ cup gluten-free flour
  • 2 large eggs
  • 1 cup panko breadcrumbs (gluten-free if needed)
  • ½ cup grated parmesan cheese
  • 1 tablespoon avocado oil
  • ½ teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • ½ teaspoon cumin
  • Kosher salt and pepper (to taste)

Instructions

  1. Preheat your oven to 425°F (220°C) and line a large sheet pan with baking paper.
  2. Wash the asparagus and snap off the tough ends.
  3. Coat half the asparagus in flour using a Ziplock bag.
  4. In a bowl, beat together eggs and avocado oil.
  5. In another bowl, combine panko breadcrumbs with Parmesan cheese and seasonings.
  6. Dip flour-coated asparagus in the egg mixture, then coat with breadcrumbs.
  7. Place on the prepared sheet pan without overcrowding.
  8. Bake for 12-15 minutes until crispy and golden.
