  • 1/4 cup toasted pecan halves
  • 1 small shallot, finely chopped
  • 1/2 small Granny Smith apple, diced
  • 3 tablespoons reduced-sugar dried cranberries
  • 1 tablespoon chopped fresh rosemary
  • 2 ounces firm goat cheese, crumbled

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Slice the sweet potatoes into rounds about 1/4 inch thick and arrange them on a baking sheet.
  3. Drizzle with 1 tablespoon of olive oil, then sprinkle with salt and black pepper. Toss to coat evenly.
  4. Bake for about 20–25 minutes, flipping halfway through until the rounds are crispy and golden.
