Ingredients

  • 2 1/2 cups water (divided)
  • 3/4 cup unsweetened cocoa powder
  • 1/2 teaspoon coffee grounds
  • 1/2 cup agave syrup
  • 6 oz bittersweet or semi-sweet chocolate (chopped)
  • 1/4 teaspoon vanilla extract
  • 1 tablespoon sugar
  • 1/8 teaspoon kosher salt

Instructions

  1. In a saucepan, boil 1 1/2 cups of water with agave syrup.
  2. Whisk in cocoa powder until smooth.
  3. Simmer for about 10-15 minutes until syrupy.
  4. Combine melted chocolate with half of the warm mixture; whisk until smooth.
  5. Add the rest of the mixture and stir to combine.
  6. Incorporate remaining water, coffee grounds, vanilla extract, and sugar; whisk until smooth.
  7. Blend for an additional 15 seconds for a silky texture.
  8. Chill in the fridge before freezing as per your ice cream maker's instructions or blend again and freeze overnight if you don’t have one.
