  • 2Âľ cups grated carrots
  • 1 can crushed pineapple (drained)
  • Âľ cup unsweetened flaked coconut
  • Âľ cup chopped pecans or walnuts
  • 1 package light cream cheese (softened)
  • 1 cup unsalted butter (softened)
  • 4 cups powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C). In a bowl, mix both sugars with melted butter and coconut oil until smooth. Add eggs and vanilla; stir well.
  2. In another bowl, whisk together flours, baking soda, baking powder, salt, and spices. Gradually fold dry ingredients into the wet mixture.
  3. Gently mix in grated carrots, drained pineapple, coconut flakes, and nuts until just combined.
  4. Pour batter into greased jars or ramekins and bake for 20-25 minutes or until a toothpick comes out clean.
  5. For frosting, beat softened cream cheese and butter until fluffy; gradually add powdered sugar.
