  • 1 large white onion (roughly chopped)
  • 3 jalapeño peppers (halved)
  • 2 cloves garlic
  • 1 tablespoon Mexican oregano
  • 1 teaspoon kosher salt
  • 6 cups broth (chicken or vegetable)
  • 1 cup cilantro (stems and leaves)
  • 2 cans white hominy (15-ounce, drained and rinsed)
  • Lime wedges (for serving)
  • Sliced radishes (for serving)
  • Thinly sliced shredded cabbage (for serving)
  • Diced white onions (for serving)
  • Chopped cilantro (for serving)
  • Mexican oregano (for serving)

Instructions

  1. In a large pot or Dutch oven, combine chicken thighs, tomatillos, onion, jalapeños, garlic, oregano, salt, and broth. Bring to a boil over high heat. Reduce heat to low, cover partially, and simmer for about 40 minutes until chicken is tender.
  2. Remove chicken from pot and shred it with two forks. Set aside.
  3. Use a slotted spoon to transfer cooked tomatillos, onions, jalapeños, and garlic to a blender. Add one cup of cooking liquid and cilantro; blend until smooth.
  4. Pour blended mixture back into the pot along with shredded chicken and hominy. Simmer uncovered for an additional 15 minutes.
  5. Serve hot with lime wedges, sliced cabbage, radishes, diced onions, cilantro, and Mexican oregano for customization.
