  • 1 large onion (finely chopped)
  • 1 carrot (peeled and grated)
  • 1 stalk celery (finely chopped)
  • 1/2 sweet bell pepper (finely chopped)
  • 1/2 poblano pepper (finely chopped)
  • 3 medium potatoes (peeled and chopped)
  • 1 1/2 lbs fish (fresh or frozen such as salmon or cod)
  • 810 cups water
  • Optional: 1/2 cup heavy cream
  • Fresh herbs (dill, green onions, parsley)

Instructions

  1. Prep all vegetables by chopping and shredding them.
  2. In a large pot or Dutch oven, heat butter or oil over medium heat. Add onion, carrot, celery, garlic, sweet bell pepper, and poblano pepper; sauté for about 5-7 minutes until softened.
  3. Stir in tomato paste or fresh tomatoes along with bay leaves; cook for an additional 3-5 minutes.
  4. Add water or broth followed by the potatoes; bring to a boil then lower to a simmer for about 15 minutes until potatoes are tender.
  5. Cut fish into approximately 2-inch pieces and add to the pot. Cook until fish is opaque, about 5-7 minutes if frozen or 3-5 if fresh.
  6. If using heavy cream, stir it in off the heat. Garnish with fresh herbs before serving.
