  • 1 cup sour cream
  • 3 tablespoons red food coloring

  • 12 oz white chocolate (melted)
  • 1 cup confectioners' sugar

  • 1/4 teaspoon peppermint extract

Instructions

  1. Preheat oven to 350°F (175°C). In a large bowl, mix together yellow cake mix, flour, granulated sugar, cocoa powder, vegetable oil, eggs, vanilla extract, milk, sour cream, and red food coloring until well combined.
  2. Line a muffin tin with cupcake liners and fill each about two-thirds full with batter. Bake for approximately 30 minutes or until a toothpick comes out clean.
  3. Allow cupcakes to cool completely before frosting.
  4. For the frosting: Beat softened butter and melted white chocolate until smooth; gradually add confectioners' sugar. Mix in vanilla and peppermint extracts.
