  • 0.5 teaspoon baking soda
  • 0.5 teaspoon salt
  • 0.75 cup granulated sugar
  • 2 teaspoons vanilla extract
  • 0.33 cup vegetable oil
  • 0.250.5 cup strawberry jam (for filling)
  • Vegan vanilla icing (to taste)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix almond milk and apple cider vinegar; let sit for 5 minutes.
  3. Whisk together flour, baking powder, baking soda, and salt in another bowl.
  4. Combine sugar, vanilla extract, and vegetable oil in a separate bowl until smooth.
  5. Mix wet ingredients with the dry ingredients and the milk mixture until just combined.
  6. Pour batter into lined cupcake tins and bake for about 25 minutes or until a toothpick comes out clean.
  7. Once cooled, cut holes in the tops of each cupcake and fill with strawberry jam before replacing the tops.
  8. Ice with vegan vanilla icing and drizzle additional jam for blood effects.
