  • 2 tablespoons olive oil
  • 1 teaspoon dried Italian seasoning
  • 3 cups chicken or vegetable broth
  • 1 can diced tomatoes (28 ounces)
  • 4 cups cheese tortellini (fresh or frozen)
  • 3 cups fresh baby spinach
  • ½ to ¾ cup heavy cream
  • Grated parmesan cheese (for topping)

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté diced onions until translucent (6-8 minutes). Add minced garlic and Italian seasoning; cook for another minute.
  2. Stir in flour and cook for one minute. Gradually add broth while stirring until smooth.
  3. Add diced tomatoes, bring to boil, then simmer for 5-6 minutes.
  4. Blend the soup with an immersion blender until smooth. Adjust thickness by adding more broth if necessary.
  5. Stir in sugar, salt, and pepper to taste.
  6. Add tortellini and simmer for 8-10 minutes (add extra time for frozen).
  7. Incorporate heavy cream and spinach; let the spinach wilt before serving.
