  • 1 cup cooked chickpeas
  • 1 cup cherry tomatoes, cut into quarters
  • ½ medium red onion, small dice
  • ½ English cucumber, small dice
  • ½ cup pepperoncini peppers, chopped fine
  • ½ cup pitted olives, chopped fine
  • 2 romaine hearts, finely shredded
  • 1 small head radicchio, finely shredded
  • ¼ cup apple cider vinegar
  • 1 tablespoon fresh thyme leaves, minced
  • 1 tablespoon pepperoncini pepper brine
  • 1 tablespoon vegan mayonnaise
  • 23 teaspoons agave nectar or fine sugar (or honey)
  • ½ teaspoon Dijon mustard
  • ½ teaspoon Tamari soy sauce
  • 1 clove garlic, finely minced
  • Sea salt and ground black pepper (to taste)
  • 7 tablespoons olive oil

Instructions

  1. To make the dressing, whisk together apple cider vinegar, minced thyme leaves, pepperoncini brine, vegan mayonnaise, agave nectar (or sugar/honey), Dijon mustard, Tamari soy sauce, minced garlic, salt, pepper, and olive oil until smooth.
  2. In a large bowl, combine cooked chickpeas, quartered cherry tomatoes, diced red onion, diced cucumber, chopped pepperoncini peppers, chopped olives, shredded romaine hearts, and radicchio. Toss gently to mix.
  3. Drizzle the dressing over the salad and toss again to evenly coat all ingredients.
