  • 2 medium courgettes
  • 1 onion, finely chopped
  • 1 leek, finely sliced
  • 2 cloves garlic, finely chopped
  • 40 g porcini mushrooms
  • 250 g chestnut mushrooms, chopped
  • 1 tin chopped plum tomatoes (400 g)
  • 1 tbsp olive oil
  • 1 tbsp reduced salt soy sauce
  • 1 tsp dried thyme
  • 250 g cooked green lentils, drained and rinsed
  • 2 tbsp flat-leaf parsley leaves, chopped

Instructions

  1. Spiralize the courgettes to create courgetti and set aside.
  2. Soak the porcini mushrooms in hot water for about 10 minutes, then chop them.
  3. In a large skillet, heat olive oil over medium heat. Add onion, leek, and garlic; sauté until softened.
  4. Stir in the chopped porcini and chestnut mushrooms; cook until they release moisture.
  5. Add chopped tomatoes, soy sauce, dried thyme, and green lentils; simmer for about 10 minutes.
  6. Serve the warm sauce over courgetti, garnished with parsley.
