  • 400 ml vegetable stock
  • 0.25 cup single dairy cream
  • 50 g mozzarella or cheddar cheese
  • 30 g pecans

Instructions

  1. Prepare the pumpkin by peeling and dicing it into small cubes.
  2. Cook the gnocchi in boiling water until they float; then drain well.
  3. In a saucepan, combine vegetable stock and single dairy cream over medium heat, adding the diced pumpkin. Season with salt and pepper, then simmer until the pumpkin is tender (about 10 minutes).
  4. In a baking dish, mix the cooked gnocchi with the creamy sauce, crumbling in your chosen cheese and sprinkling with sage leaves.
  5. Top with shredded mozzarella or cheddar and chopped pecans before baking at 180°C (356°F) for about 20-25 minutes until golden.
  6. Allow to rest for 5 minutes before serving.
