  • 2 cups peeled and diced sweet potato
  • 1.5 teaspoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 0.5 teaspoon smoked paprika
  • 0.25 teaspoon garlic powder

  • 4 ounces diced green chiles
  • 0.5 cup salsa or salsa verde
  • 2 cups cooked brown rice
  • 15 ounce can low sodium black beans (drained and rinsed)
  • 2 tablespoons chopped cilantro
  • 1 juice of a lime
  • 0.5 cup shredded cheese (cheddar, colby jack, or monterey jack)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat. Add diced sweet potatoes and cook until tender, about 10 minutes.
  3. Stir in chili powder, cumin, oregano, smoked paprika, garlic powder, salt, and pepper; cook for an additional 2 minutes.
  4. Mix in diced green chiles, salsa, cooked brown rice, black beans, chopped cilantro, and lime juice until well combined.
  5. Transfer the mixture to a greased baking dish and top with shredded cheese if desired.
