  • 1 large shallot
  • 2 tbsp olive oil
  • 1 tsp maple syrup or honey
  • 1 tsp smoked paprika
  • 1 tsp ground cumin
  • 1/4 tsp cinnamon
  • 1/2 tsp kosher salt
  • 2 tbsp apple cider vinegar
  • 1 tsp Dijon mustard
  • 1 cup dry French lentils
  • 34 medjool dates
  • 1/4 cup castelvetrano olives
  • 1/4 cup salted, roasted almonds (optional)
  • 1/4 cup flat-leaf parsley
  • 2 tbsp fresh mint
  • Hummus (for serving)

Instructions

  1. Preheat your oven to 425°F (220°C). Toss sliced carrots and shallots in olive oil, maple syrup (or honey), smoked paprika, cumin, cinnamon, and kosher salt. Spread on a baking sheet and roast for about 30 minutes until golden brown.
  2. While the vegetables roast, rinse lentils under cold water. In a pot, combine lentils with 3 cups of water. Bring to a boil, then simmer for about 20 minutes until tender. Drain excess liquid.
  3. In a large bowl, combine roasted vegetables, cooked lentils, chopped dates, olives, parsley, and mint. Whisk together apple cider vinegar and Dijon mustard in a separate bowl; drizzle over the salad mixture and toss gently.
  4. Serve alongside dollops of creamy hummus.
