  • 2 lb butternut squash (peeled and sliced)
  • 2 tablespoons olive oil
  • 2 medium leeks (thinly sliced)
  • 4 cloves garlic (roughly chopped)
  • 15 sage leaves (chopped)
  • 1 cup heavy cream or coconut milk
  • 3 ounces gruyere cheese or vegan alternative
  • 1/2 cup walnuts (chopped)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat. Sauté leeks and garlic until soft.
  3. In a greased baking dish, layer half the butternut squash slices; season with salt, pepper, nutmeg, and half of the sage. Add half the leek mixture on top.
  4. Repeat layering with remaining squash, sage, and leek mixture.
  5. Mix heavy cream with water and onion powder; pour over layers evenly.
  6. Top with gruyere cheese and walnuts.
  7. Cover with foil; bake for 40 minutes. Remove foil and bake for an additional 20 minutes until golden.
