  • 8 ounces cream cheese
  • 1 can artichoke hearts in water (14 oz, drained and finely chopped)
  • 1/4 cup mayonnaise
  • 1/2 cup shredded parmesan cheese
  • 1/4 cup shredded mozzarella cheese
  • 1 cup chopped frozen spinach (thawed and drained)
  • 2 cloves garlic (finely minced)
  • 1/4 teaspoon cayenne pepper (optional)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Wonton wrappers

Instructions

  1. Preheat oven to 350°F.
  2. In a bowl, combine all filling ingredients and mix until well combined.
  3. Lightly grease a mini muffin tin with cooking spray.
  4. Press each wonton wrapper into the muffin tin to form cups.
  5. Lightly spray the tops of the wonton wrappers with cooking spray.
  6. Bake for about 6-8 minutes or until golden brown.
  7. Fill each baked cup with the prepared filling and press down gently.
  8. Cover with foil and bake for an additional 10-12 minutes until bubbly.
  9. Remove from the tin and let cool slightly before serving.
