  • 1.2 kg beef chuck steak
  • 1 tsp cooking salt (plus extra to taste)
  • 0.5 tsp cracked black pepper (plus extra to taste)
  • 3 tbsp extra-virgin olive oil
  • 1 red onion, finely diced
  • 1 carrot, finely diced
  • 2 celery stalks, finely diced
  • 1 tbsp freshly grated garlic
  • 0.25 cup tomato paste
  • 0.25 cup apple vinegar
  • 700 g passata
  • 1 beef stock cube or beef stock powder
  • 1 tbsp sugar
  • 5 sprigs thyme
  • 400 g fresh lasagne sheets
  • 1 tbsp extra-virgin olive oil
  • Freshly grated parmesan (to serve)

Instructions

  1. Season the beef chuck steak with salt and cracked black pepper. In a skillet over medium-high heat, sear the beef on all sides until browned.
  2. In the same skillet, sauté diced onion, carrot, and celery until softened (about 5 minutes).
  3. In your slow cooker, combine seared beef with sautéed vegetables, garlic, tomato paste, apple vinegar, passata, beef stock cube or powder, sugar, and thyme.
  4. Cover and cook on low for about 5 hours or high for 3 hours until the beef is tender.
  5. Shred the meat in the sauce before serving over cooked lasagne sheets or polenta.
