  • 6 tablespoons unsalted butter (softened)
  • ¾ cup granulated sugar
  • 1 ½ teaspoons pure vanilla extract
  • 2 large eggs
  • 1 ¼ cups all-purpose flour
  • 1 teaspoon cornstarch
  • 1 ¼ teaspoons baking powder
  • ¼ teaspoon salt
  • ⅓ cup plus 1 tablespoon whole milk
  • 1 tablespoon sunflower oil

Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake pan with liners.
  2. In a mixing bowl, cream together softened butter and granulated sugar until light and fluffy.
  3. Add eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  4. In another bowl, whisk together flour, cornstarch, baking powder, and salt.
  5. Gradually add the dry ingredients alternately with milk and oil to the wet mixture until just combined.
  6. Fill cupcake liners about two-thirds full with batter and bake for 20-25 minutes or until a toothpick comes out clean. Cool completely.
  7. Once cooled, fill each cupcake with Easy One Pot Vanilla Pastry Cream.
  8. Sprinkle coarse sugar on top and use a kitchen torch to caramelize until golden.
