  • 1 medium yellow onion, diced
  • 16 ounces cremini or button mushrooms, thinly sliced
  • 3 cloves garlic, minced
  • 1 quart unsalted chicken stock or broth
  • 2 cups water
  • 1 pound boneless, skinless chicken breasts or thighs
  • 8 ounces dry lasagna noodles
  • 10 ounces baby spinach
  • 1 cup freshly grated Parmesan cheese
  • 2 cups whole milk

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté the diced onion until translucent.
  2. Add mushrooms and garlic; cook until mushrooms are tender.
  3. Pour in chicken stock and water; add thyme sprigs and bay leaf. Bring to a gentle boil.
  4. Add the chicken and simmer for about 15-20 minutes until cooked through. Shred the chicken and return it to the pot.
  5. Break lasagna noodles into pieces and stir them into the soup along with spinach. Simmer until noodles are tender.
  6. Stir in Parmesan cheese and whole milk; season with salt and black pepper to taste.
