  • 1214 pound whole turkey
  • 2 tablespoons kosher salt
  • 12 teaspoons lemon or orange zest
  • 1 tablespoon minced fresh herbs (thyme, oregano, sage)
  • 4 tablespoons unsalted butter
  • 2 cups chicken broth
  • 1 small yellow onion (sliced)
  • Fresh rosemary and thyme sprigs

Instructions

  1. In a small bowl, mix kosher salt, lemon or orange zest, and minced herbs.
  2. Rub the mixture generously over the thawed turkey, including under the skin.
  3. Place the turkey on a rack in a roasting pan, cover loosely with plastic wrap, and refrigerate for at least 24 hours.
  4. Preheat oven to 325°F (165°C). Melt butter and mix with additional seasonings. Prepare chicken broth base in the roasting pan with sliced onions and fresh herbs.
  5. Roast turkey in the oven, basting occasionally with melted herb butter until it reaches an internal temperature of 165°F (74°C).
  6. Let the turkey rest for at least 20 minutes before carving.
