  • 200 grams Unsalted butter
  • 125 grams Light brown sugar
  • 100 grams White caster sugar
  • 2 large Eggs
  • 250 grams Self-raising flour
  • 100 grams Plain flour
  • 50 grams Cocoa powder
  • 0.5 teaspoon Salt
  • 100 grams Milk chocolate chips
  • 1 teaspoon Unsalted butter
  • 2 sheets Filo pastry (75 grams each)
  • 200 grams Pistachio cream

Instructions

  1. Cream together 200g unsalted butter, 125g light brown sugar, and 100g white caster sugar until fluffy.
  2. Beat in 2 large eggs one at a time.
  3. In another bowl, whisk together 250g self-raising flour, 100g plain flour, 50g cocoa powder, and 0.5 teaspoon salt. Gradually add to the wet mixture until combined.
  4. Gently fold in 100g milk chocolate chips.
  5. Prepare two sheets of filo pastry by brushing with melted butter; layer them on top of each other.
  6. Spread 200g pistachio cream over the layered filo pastry and spoon dollops of cookie dough on top.
  7. Bake at 180°C (350°F) for about 15 minutes until set around the edges but soft in the center.
