  • ¼ cup butter (50g)
  • 2 banana shallots (finely chopped)
  • 2 cloves garlic (minced)
  • 1 â…“ cups baby spinach (300g)
  • 1 cup heavy cream (250ml)
  • ½ teaspoon grated nutmeg
  • 1 teaspoon Dijon mustard
  • 4 large free-range eggs
  • ¼ cup vegetarian Parmesan cheese (30g)
  • ¼ teaspoon ground black pepper
  • ¼ teaspoon sea salt
  • 2 tablespoons chopped flat-leaf parsley

Instructions

  1. Preheat oven to 392F / 200C.
  2. Melt butter in an ovenproof skillet over low-medium heat. Add shallots and sauté for about 10 minutes until golden brown.
  3. Stir in garlic and cook for another minute. Gradually add spinach until wilted, seasoning with black pepper and sea salt.
  4. In a separate saucepan, combine heavy cream, nutmeg, and Dijon mustard; bring to a gentle boil while stirring until thickened.
  5. Create hollows in the spinach mixture and crack an egg into each hollow. Pour the cream sauce around the eggs and sprinkle with Parmesan cheese.
  6. Cover with a lid and bake for about 10 minutes; remove the lid during the last five minutes for a golden finish.
  7. Garnish with parsley and serve immediately with crusty bread.
