  • 1 lb lean ground beef
  • Kosher salt and ground pepper (to taste)
  • 1 medium yellow onion (diced finely)
  • 2 cloves garlic (minced)
  • 2 medium carrots (quartered and sliced)
  • 1 red bell pepper (seeded and diced)
  • 1 small green cabbage (chopped, about 67 cups)
  • 4 cups low-sodium beef broth
  • 3 x 8 oz cans crushed tomatoes
  • 1/2 cup brown rice (uncooked or quinoa)
  • 1 bay leaf
  • 1 tbsp honey
  • A few spears of fresh thyme (leaves picked)

Instructions

  1. Heat olive oil in a large Dutch oven over medium heat.
  2. Add the ground beef; season with salt and pepper. Cook until browned, breaking it apart with a spatula.
  3. Stir in the onion, garlic, carrots, bell pepper, and thyme; cook until veggies soften.
  4. Deglaze the pot with half a cup of beef broth, scraping up any browned bits.
  5. Mix in remaining broth, crushed tomatoes, brown rice (or quinoa), chopped cabbage, bay leaf, and honey; stir to combine.
  6. Bring to a gentle boil; reduce heat to low and simmer for 35–40 minutes until rice is tender.
  7. Remove bay leaf before serving hot.
