  • 3 boneless, skinless chicken breasts (about 1 lb)
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 medium onion, sliced
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • 4 large flour tortillas
  • 2 tbsp fajita seasoning
  • 2 tbsp olive oil

Instructions

  1. Preheat a large skillet over medium heat. Season chicken breasts with fajita seasoning and cook in olive oil for about 5-7 minutes per side until golden brown and cooked through. Remove from skillet and let rest before shredding.
  2. In the same skillet, sauté sliced onions and bell peppers for about 5 minutes until tender.
  3. Shred the cooked chicken and combine it with the sautéed veggies in the skillet. Mix well.
  4. Layer the chicken mixture and cheese on one half of each tortilla and fold over.
  5. Wipe out the skillet if needed and add more oil. Cook each quesadilla for about 3-4 minutes per side until crispy.
  6. Slice into wedges and serve with sour cream mixed with lime juice.
