  • 6 Tbsp unsalted butter
  • 1 large garlic clove, minced
  • 1 Tbsp lemon juice
  • 2 Tbsp chopped fresh parsley
  • 3 large chicken breasts (approximately 12 oz each)
  • 1/2 cup all-purpose flour
  • 2 cups Panko bread crumbs
  • Extra light olive oil or canola oil (for sautéing)

Instructions

  1. In a bowl, combine softened butter, minced garlic, lemon juice, parsley, salt, and pepper until well blended.
  2. Butterfly each chicken breast and pound them to even thickness. Place garlic herb butter in the center of each breast and fold over securely.
  3. Dredge each stuffed chicken in flour, dip in beaten eggs (or egg substitute), then coat with Panko bread crumbs.
  4. Heat oil in a skillet over medium heat and cook the chicken for about 6-7 minutes on each side until golden brown and cooked through.
  5. Allow the chicken to rest for a few minutes before serving.
