  • 2 pounds thin-sliced chicken breasts
  • 3 tablespoons olive oil (for pan frying)
  • 8 ounces fresh basil leaves
  • 3/4 cup extra virgin olive oil
  • 1/3 cup pignoli nuts
  • 1 clove garlic (grated)
  • 1/4 cup Parmigiano Reggiano
  • 1/4 cup Pecorino Sardo

Instructions

  1. 1. Bring a large pot of salted water to a boil. Cook the penne pasta until al dente, then drain and rinse with cold water to stop cooking.
  2. 2. In a food processor, blend fresh basil, extra virgin olive oil, pignoli nuts, and grated garlic until smooth. Add cheeses and pulse again; adjust seasoning as needed.
  3. 3. Heat olive oil in a large pan over medium heat. Season chicken breasts with salt and pepper, then cook until golden brown and fully cooked (about 3 minutes per side). Transfer to a cutting board and slice into strips.
  4. 4. In a large bowl, combine cooked pasta, sliced chicken, and half of the prepared pesto. Toss gently until well mixed; add more pesto to taste.
