  • 1 can (14 oz) fire-roasted diced tomatoes
  • 1 can (14 oz) black beans (drained and rinsed)
  • 1 cup frozen or canned corn
  • 4 cups low-sodium chicken broth
  • 2 cups shredded rotisserie chicken
  • Juice of 1 lime
  • Crispy tortilla strips or crushed tortilla chips
  • Shredded cheese
  • Sliced avocado
  • Fresh cilantro
  • Jalapeño slices
  • Sour cream

Instructions

  1. In a large pot over medium heat, sauté diced onion in olive oil until translucent (3-4 minutes). Add minced garlic and cook until fragrant (1 minute).
