  • 200 grams dried pasta (or 300 grams fresh)
  • 1 fillet salmon (approximately 160200 grams)
  • 0.5 tablespoon olive oil
  • 40 grams butter
  • 0.67 cup pasta water
  • 0.5 cup creme fraiche
  • 60 grams parmesan cheese (finely grated)
  • 1.5 tablespoons lemon juice (plus zest)
  • 2 tablespoons capers
  • Fresh herbs (chives or dill, roughly chopped)

Instructions

  1. Preheat oven to 390°F (200°C). Place salmon skin-side down on a parchment-lined baking tray, drizzle with olive oil, salt, and pepper; bake for about 5 minutes per 1.5 cm thickness.
  2. Boil well-salted water and cook pasta, undercooking by one minute from package instructions. Reserve about two-thirds cup of pasta water before draining.
  3. In a large skillet over medium heat, melt butter; add black pepper and diced garlic, cooking until fragrant (about one minute).
  4. Lower heat; whisk in reserved pasta water, then stir in creme fraiche until emulsified and simmer gently for one minute.
  5. Gradually mix in parmesan cheese until melted; quickly whisk in lemon juice.
  6. Toss cooked pasta into the sauce until well coated; let thicken for another minute while adding more pasta water if needed.
  7. Fold in capers and serve topped with flaked salmon and garnished with lemon zest and fresh herbs.
