  • 1 small yellow onion, diced
  • 1 tablespoon minced fresh ginger

  • 1.5 tablespoons curry powder
  • 1 tablespoon garam masala
  • 1.5 teaspoons chili powder
  • 0.75 teaspoon kosher salt
  • 1 small cauliflower, cut into florets
  • 1 can tomato sauce
  • 6 ounces no salt added tomato paste
  • 0.5 cup coconut milk
  • 0.5 cup plain nonfat Greek yogurt or non-dairy yogurt

Instructions

  1. Heat coconut oil in a skillet over medium-high heat. Sauté onion until softened (about 5 minutes). Add ginger, garlic, spices, and tomato paste, cooking until fragrant.
  2. Transfer the mixture to the slow cooker. Add chicken breasts and cauliflower florets on top. Pour in the tomato sauce and stir gently.
  3. Cover and cook on high for 1.5 to 2.5 hours or low for 4 to 6 hours until chicken is cooked through.
  4. Remove chicken, shred it while stirring the mixture until cauliflower is tender (if needed).
  5. Return shredded chicken to the slow cooker and mix in yogurt and coconut milk before serving.
