  • 1/2 cup BBQ sauce (for marinating)
  • 12 wooden skewers, pre-soaked
  • 1/3 cup light ranch dressing
  • 1/3 cup BBQ sauce (for drizzling)
  • 3 Tbsp buttermilk
  • 4 ears corn
  • 2 heads romaine, chopped or torn
  • 1 cup diced tomatoes
  • 1 15 oz can black beans, drained and rinsed
  • 1 avocado, pitted and thinly sliced

Instructions

  1. Marinate 24 oz of cubed chicken breasts in 1/2 cup BBQ sauce for at least 30 minutes.
  2. Soak 12 wooden skewers while you chop 2 heads of romaine lettuce, dice 1 cup of tomatoes, and slice 1 avocado.
  3. Grill corn on medium-high heat until charred, then cut kernels off the cob.
  4. Thread marinated chicken onto skewers and grill for 10-15 minutes until cooked through.
  5. In a large bowl, combine romaine, diced tomatoes, black beans, corn kernels, and sliced avocado.
  6. Remove chicken from skewers and place on top of the salad mix; drizzle with ranch dressing and additional BBQ sauce if desired.
