  • 1 lb Lean Ground Beef
  • 1 Tbsp Olive Oil
  • 1 Sweet Onion (diced)
  • 2 Celery Stalks (sliced)
  • 2 Medium Carrots (peeled and sliced)
  • 1 Bell Pepper (chopped)
  • 1 Cup Green Peas (fresh or frozen)
  • 23 Garlic Cloves (pressed)
  • 2 Tbsp Worcestershire Sauce
  • 5 Cups Low Sodium Beef Broth
  • 14 oz Diced Tomatoes with juice (one can)
  • 1 Tsp Dried Oregano
  • Sea salt and pepper, to taste
  • 2 Tbsp Fresh Chopped Parsley

Instructions

  1. Heat olive oil in a large stockpot over medium heat. Add ground beef and cook until browned, about 5-6 minutes. Drain any excess fat.
  2. Stir in diced onion, celery, carrots, bell pepper, green peas, and pressed garlic. Cook for another 5 minutes until vegetables soften.
  3. Pour in Worcestershire sauce, beef broth, and diced tomatoes (with juice). Add dried oregano and mix well.
  4. Reduce heat and let the soup simmer for about 15-20 minutes. Season with sea salt and pepper to taste.
  5. Serve hot, garnished with fresh chopped parsley.
