  • 1 teaspoon Kosher Salt
  • ½ teaspoon Coarsely Ground Black Pepper
  • 2 tablespoons Gluten-free All-Purpose Flour
  • 2 tablespoons Olive Oil
  • ½ Yellow Onion (chopped)
  • 4 Garlic Cloves (minced)
  • 1 Large Carrot (cut into chunks)
  • 2 Yukon Gold Potatoes (diced)
  • 2 Cups Beef Broth
  • ¼ Cup Tomato Paste
  • 1 tablespoon Worcestershire Sauce
  • 1 Bay Leaf
  • Fresh Thyme Leaves (for garnish)

Instructions

  1. Preheat your oven to 325°F.
  2. Season the beef with salt and pepper, then coat with flour.
  3. In a Dutch oven, heat olive oil over medium heat and brown the beef in batches; set aside.
  4. In the same pot, sauté onion, garlic, and carrot until fragrant.
  5. Add potatoes, beef broth, tomato paste, bay leaf, thyme, and Worcestershire sauce; stir well.
  6. Return the browned beef to the pot, bring to a simmer, cover and transfer to the oven.
  7. Cook for 2 to 2.5 hours until the beef is tender; remove bay leaf before serving.
