  • 2 lbs Boneless Skinless Chicken Breasts
  • 1 Tbsp Olive Oil
  • 1/2 Cup Mild Salsa
  • 2 Cans Green Chiles
  • 4 Tbsp Brown Sugar
  • 1 can (14.5 oz) Diced Tomatoes
  • 1 Tsp Chili Powder
  • 1 Tsp Cumin
  • 1 Tsp Garlic Powder
  • 1/2 Tsp Cayenne Pepper
  • 1/2 Tsp Oregano
  • 2 Tsp Salt
  • 3 Tsp Black Pepper

Instructions

  1. Season chicken breasts with salt, black pepper, cumin, chili powder, garlic powder, oregano, and cayenne pepper.
  2. In your Instant Pot on sauté mode, heat olive oil. Sear seasoned chicken for 2-3 minutes on each side until browned.
  3. Add mild salsa, green chiles, diced tomatoes, and brown sugar; stir to combine.
  4. Close the lid and pressure cook on high for 10 minutes.
  5. Allow for a natural release for 10 minutes before quick releasing any remaining pressure.
  6. Remove chicken and shred it using two forks; return shredded chicken to the pot and stir well.
