  • 4 thinly sliced chicken breast cutlets
  • 1/4 cup almond flour
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 1 large shallot
  • 2 tsp minced garlic
  • 1/4 cup white cooking apple vinegar
  • 1 tbsp lemon juice
  • 1/2 cup bone broth
  • 1/2 cup heavy whipping cream
  • 1/4 cup capers

Instructions

  1. Season the chicken cutlets with salt and pepper.
  2. Dredge each cutlet in almond flour.
  3. Heat butter and olive oil in a skillet over medium-high heat; sauté the chicken for about 3-5 minutes on each side until browned and cooked through.
  4. Remove chicken from skillet and keep warm.
  5. In the same skillet, add shallots and cook until softened; then add garlic and sauté briefly.
  6. Deglaze the pan with white cooking apple vinegar, scraping up any bits.
  7. Add lemon juice and bone broth; allow to reduce slightly.
  8. Stir in heavy whipping cream; mix well until smooth.
  9. Fold in capers and return chicken to the skillet to coat it in sauce.
  10. Serve over warmed palmini noodles or your choice of sides.
