  • 2 lb zucchini (sliced)
  • 3 tbsp olive oil (divided)
  • 1 onion (grated)
  • 34 garlic cloves (minced)
  • 1 cup almond milk
  • 1 1/2 tbsp cornstarch
  • ½ tsp oregano
  • ¼ cup finely grated parmesan cheese
  • ½ cup cheddar cheese
  • ¼ cup seasoned bread crumbs

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In an oven-safe dish, toss sliced zucchini with salt, pepper, and 2 tablespoons of olive oil. Bake for 10-12 minutes until slightly softened.
  3. In a saucepan, heat the remaining olive oil over medium heat. Sauté grated onion and minced garlic until fragrant (about 2-3 minutes).
  4. In a bowl, whisk together almond milk, cornstarch, and oregano until smooth. Add this to the saucepan and simmer until thickened (3-4 minutes). Stir in parmesan cheese until melted.
  5. Drizzle the sauce over the baked zucchini and mix gently.
  6. Top with cheddar cheese and seasoned breadcrumbs.
  7. Bake for an additional 35-40 minutes until golden brown and bubbly.
  8. Let cool slightly before serving.
