In an oven-safe dish, toss sliced zucchini with salt, pepper, and 2 tablespoons of olive oil. Bake for 10-12 minutes until slightly softened. In a saucepan, heat the remaining olive oil over medium heat. Sauté grated onion and minced garlic until fragrant (about 2-3 minutes). In a bowl, whisk together almond milk, cornstarch, and oregano until smooth. Add this to the saucepan and simmer until thickened (3-4 minutes). Stir in parmesan cheese until melted. Drizzle the sauce over the baked zucchini and mix gently. Top with cheddar cheese and seasoned breadcrumbs. Bake for an additional 35-40 minutes until golden brown and bubbly.
