  • 3 large zucchini
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/3 cup grated Parmesan cheese
  • 1 large egg
  • 1 ½ cups marinara sauce
  • 2 cloves garlic (minced)
  • 1 tsp Italian seasoning
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 tbsp olive oil (for greasing baking dish)

Instructions

  1. Preheat your oven to 375°F (190°C). Wash and slice the zucchini lengthwise into thin strips. Sprinkle with salt and let sit for about 10 minutes to draw out moisture.
  2. In a bowl, mix ricotta cheese, egg, grated Parmesan, minced garlic, Italian seasoning, salt, and black pepper until well combined.
  3. Grease a baking dish with olive oil. Spread about 2 tablespoons of the ricotta mixture onto each zucchini strip and roll it up tightly. Place seam-side down in the baking dish.
  4. Pour marinara sauce over the rolls and top with shredded mozzarella cheese.
  5. Cover with foil and bake for 20 minutes; then remove foil and bake for an additional 10 minutes until bubbly and golden brown.
