  • 12 large eggs
  • 1/2 cup mayonnaise
  • 2 tablespoons sour cream
  • 1 tablespoon chopped fresh cilantro
  • 1 teaspoon lime juice
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon garlic powder
  • Salt and black pepper to taste
  • 1/4 cup crumbled cotija cheese
  • 2 tablespoons finely diced red onion
  • 1 tablespoon finely diced jalapeño (optional)
  • Paprika for garnish

Instructions

  1. Boil the eggs for about 10-12 minutes. Once done, cool under cold water and peel.
  2. Slice each egg in half and scoop out the yolks into a bowl.
  3. Mash yolks with mayonnaise, sour cream, cilantro, lime juice, chili powder, garlic powder; season with salt and pepper.
  4. Spoon or pipe the mixture back into egg whites.
  5. Top with cotija cheese, red onion, jalapeño (if using), chipotle mayo drizzle, and garnish with paprika.
