  • 1 lb sirloin steak or steak tips, cut into bite-sized pieces
  • 1 tbsp olive oil
  • 2 tbsp butter
  • 3 cloves garlic, minced
  • 1 tbsp all-purpose flour
  • 2 cups milk (whole milk or 2%)
  • 1 cup beef broth
  • 2 cups shredded sharp cheddar cheese
  • 1 package (20 oz) cheese tortellini
  • ½ cup shredded mozzarella for topping

Instructions

  1. Preheat oven to 375°F (190°C). Season steak with salt and pepper. In a skillet over medium-high heat, sear steak for 2–3 minutes on each side until browned.
  2. In the same skillet, melt butter over medium heat. Add garlic and cook until fragrant. Stir in flour to make a roux, then gradually whisk in milk and beef broth until smooth. Add cheddar cheese until creamy.
  3. Cook tortellini according to package instructions until slightly undercooked. Drain and toss with olive oil.
  4. Grease a baking dish and combine cooked tortellini, seared steak, and cheese sauce together. Top with shredded mozzarella.
  5. Bake uncovered for 20–25 minutes until bubbly and golden brown. Garnish with chopped parsley before serving.
