  • 1 yellow onion
  • 8 oz baby bella mushrooms
  • 12 oz green beans
  • 4 tbsp butter (divided)
  • 1/2 cup crushed crackers (like Ritz)
  • 1/3 cup shredded white cheddar cheese
  • 1 tsp garlic powder
  • Salt
  • Pepper

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Finely chop the onion and slice the mushrooms.
  3. In a pan over medium heat, melt 2 tbsp of butter. Add onions, mushrooms, garlic powder, salt, and pepper; sauté for about 5 minutes until softened.
  4. In a baking dish, combine sautéed vegetables with green beans.
  5. Bake uncovered for 30 minutes.
  6. While baking, melt remaining butter and mix with crushed crackers.
  7. After 30 minutes, sprinkle cracker mixture and shredded cheese on top; bake for an additional 10 minutes until bubbly and golden brown.
  8. Let cool slightly before serving.
