  • 4 skinless boneless chicken breasts
  • 1/4 cup hot sauce
  • 1/4 cup olive oil
  • 1 tbsp smoked paprika
  • 2 tbsp lemon juice
  • 2 cloves garlic (minced)
  • Kosher salt and ground pepper (to taste)
  • 4 cups romaine lettuce (chopped)
  • 1 pint cherry tomatoes (halved)
  • 1 small red onion (thinly sliced)
  • 1 avocado (sliced)
  • 1 carrot (thinly sliced)
  • 1 celery stalk (chopped)
  • 2/3 cup homemade ranch dressing

Instructions

  1. In a bowl, whisk together hot sauce, olive oil, smoked paprika, lemon juice, minced garlic, salt, and pepper to create the marinade. Add chicken breasts and coat well. Marinate in the fridge for up to 30 minutes.
  2. Preheat grill or grill pan over medium-high heat. Grill chicken for 6-8 minutes on each side until fully cooked (internal temperature reaches 165°F).
  3. While chicken is grilling, prepare the salad by chopping all vegetables and placing them in a large bowl.
  4. Slice grilled chicken and place it on top of the veggies. Drizzle with ranch dressing and serve.
