  • 1 tablespoon granulated sugar
  • 1 cup plus 2 tablespoons milk
  • 1/4 cup sour cream
  • 1 large egg
  • 3 tablespoons melted butter (plus more for cooking)
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1/4 cup freshly grated Parmesan cheese

  1. In a large bowl, whisk together the flour, baking powder, salt, and sugar.
  2. In another bowl, combine the milk, sour cream, egg, and melted butter until smooth.
  3. Gently fold the wet ingredients into the dry mixture until just combined; avoid overmixing.
  4. Preheat a skillet over medium heat and add a small amount of butter.
  5. Pour about one-third cup of batter for each pancake. Cook until bubbles form on top (about 3-4 minutes).
  6. Flip one pancake over and top it with cheddar, mozzarella, Parmesan, and black pepper; flip the second pancake as well.
