  • 1 tablespoon fresh lime juice

  • ½ teaspoon ground cumin

  • ¼ teaspoon onion powder
  • ¼ teaspoon dried oregano
  • A pinch of salt and pepper (or to taste)
  • 1 cup cooked brown rice
  • 1 tablespoon lime juice
  • 2 cups mixed greens
  • ½ cup black beans
  • ½ cup canned corn, drained (or grilled)
  • ⅓ cup cherry tomatoes, cut into quarters
  • 1 small avocado, sliced
  • 2 tablespoons Greek yogurt
  • ½ red onion, diced
  • 1 jalapeño pepper, sliced
  • A small handful of chopped cilantro (plus more to garnish)

Instructions

  1. Marinate chicken: In a zip-top bag, combine olive oil, lime juice, paprika, cumin, chili powder, garlic powder, onion powder, oregano, salt, and pepper. Add chicken breasts and marinate for at least 30 minutes.
