  • 1 tablespoon fresh parsley (chopped)
  • 1 tablespoon fresh chives (chopped)
  • 1 1/2 teaspoons garlic (minced)
  • 1/2 teaspoon lemon juice
  • 1/4 teaspoon lemon zest
  • 1/4 teaspoon dried tarragon leaves
  • 4 whole lobster tails (thawed; 45 oz each)
  • 1 tablespoon extra virgin olive oil
  • Kosher salt and ground black pepper

Instructions

  1. Prepare the Garlic Herb Butter by melting all ingredients together in a saucepan over medium heat.
  2. Pat the lobster tails dry and cut down the center of the shell using kitchen scissors.
  3. Brush tails with olive oil and season with salt and pepper.
  4. Preheat grill to medium-high heat and clean grates.
  5. Grill lobster tails meat-side down for about four minutes, then flip and baste with Garlic Herb Butter for another one to two minutes until cooked through.
