  • ½ cup olive oil
  • ¼ cup fresh lemon juice
  • 1 tbsp honey
  • 4 garlic cloves, minced
  • 1 cup dry Israeli couscous
  • Mini cucumber, chopped
  • Scallions, chopped
  • Fresh dill, finely chopped
  • Fresh parsley, finely chopped

Instructions

  1. Whisk together olive oil, lemon juice, honey, garlic, Dijon mustard, oregano, salt, and pepper in a bowl.
  2. Marinate the skirt steak in half of the marinade for at least 30 minutes.
  3. Cook couscous according to package instructions; rinse under cold water.
  4. Mix cooked couscous with remaining marinade, cucumber, scallions, dill, parsley, and feta cheese. Chill until ready to serve.
  5. Preheat grill to medium-high heat. Grill steak for 3-4 minutes on each side until desired doneness.
  6. Let the steak rest for 10 minutes before slicing against the grain.
