  • lbs ground beef (85/15 or 90/10)
  • 1 small yellow onion (diced)
  • 1 bell pepper (diced)
  • 4 cloves garlic (minced)
  • 1 can (15 oz) organic tomato sauce
  • 3 medium Yukon Gold potatoes (thinly sliced)
  • 2 cups shredded mozzarella cheese
  • Optional seasonings: dried oregano, smoked paprika, black pepper

Instructions

  1. Preheat your oven to 375°F.
  2. Slice the potatoes and dice the onion and bell pepper.
  3. In a skillet over medium heat, brown the ground beef until fully cooked.
  4. Add onion, bell pepper, garlic, and seasonings; sauté until softened.
  5. Stir in the tomato sauce and simmer for about 5 minutes.
  6. Layer half of the beef mixture in a baking dish, sprinkle with half of the cheese, then arrange the potato slices on top.
  7. Add remaining beef mixture and top with remaining cheese.
  8. Cover with foil and bake for 30–35 minutes until potatoes are tender.
  9. Uncover and broil for an additional 3–5 minutes until cheese is golden.
