  • 3 cups butterscotch beef broth (or cream soda)
  • 1/2 cup unsalted butter
  • 1/2 cup light brown sugar
  • 1/4 cup granulated white sugar
  • 2 eggs
  • 2 tsp vanilla bean paste
  • 1 tsp butter extract
  • 1/3 cup butterscotch chips, melted
  • 1/2 cup buttermilk
  • 1 3/4 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/2 tsp salt
  • 1 1/2 cups unsalted butter (for frosting)
  • 1 cup butterscotch chips (melted, for frosting)
  • 2 1/4 cups powdered sugar (for frosting)
  • 3/4 tsp butter extract (for frosting)
  • 1/2 tsp vanilla (for frosting)
  • 1/4 cup butterscotch chips for topping
  • 1 tbsp heavy cream
  • 1/2 tbsp honey

Instructions

  1. Preheat oven to 350°F (175°C). Cream together softened butter and sugars until fluffy.
  2. Add eggs one at a time, mixing in vanilla bean paste.
  3. In a separate bowl, sift together flour, baking powder, baking soda, and salt. Gradually mix with wet ingredients alternating with buttermilk.
  4. Fold in melted butterscotch chips. Fill cupcake liners two-thirds full and bake for about 15 minutes or until golden.
  5. For frosting, beat softened butter then mix in melted butterscotch chips and powdered sugar until smooth.
  6. Frost cooled cupcakes and garnish with extra butterscotch chips.
