  • 1 Small Butternut Squash
  • 2 tablespoons Butter (melted)
  • 2 Garlic Cloves (minced)
  • 2 tablespoons Honey (or maple syrup)
  • 1 teaspoon Chili Flakes
  • 34 Sprigs Fresh thyme (picked)
  • Salt and freshly ground pepper

Instructions

  1. Preheat the oven to 400°F.
  2. Cut the butternut squash in half lengthwise and scoop out the seeds.
  3. Peel the skin off using a vegetable peeler.
  4. Place the squash halves cut-side down on a baking sheet.
  5. In a bowl, whisk together melted butter, honey, minced garlic, chili flakes, and thyme.
  6. Brush half of the glaze onto each squash half; season with salt and pepper.
  7. Roast for 20-25 minutes until tender; let cool slightly.
  8. Carefully slice each half without cutting all the way through to create Hasselback slices.
  9. Brush with remaining glaze and roast for another 15-20 minutes until golden brown.
  10. Serve immediately.
