  • 1 ½ pounds chicken breast (cut into cubes)
  • 2 tablespoons olive oil
  • 1 tablespoon minced garlic
  • 2 teaspoons paprika
  • ½ teaspoon cumin
  • ¼ teaspoon chili powder
  • ½ teaspoon lemon pepper seasoning
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • 1 whole lemon (cut into discs)
  • 1 batch red pepper sauce
  • 2 cups cauliflower rice
  • 2 cups steamed or sautéed veggies of choice

Instructions

  1. Preheat oven to 400°F (200°C). Peel and cube sweet potatoes; toss them in olive oil, salt, garlic powder, and paprika. Roast for 25-30 minutes until golden.
  2. In a skillet over medium heat, sauté minced garlic in olive oil. Add cubed chicken with seasonings (paprika, cumin, chili powder, lemon pepper) and cook until golden brown and cooked through.
  3. Prepare cauliflower rice according to package instructions or sauté until tender.
  4. Assemble bowls: Start with cauliflower rice, layer on chicken and roasted sweet potatoes, top with steamed veggies and fresh lemon slices.
