  • 0.5 teaspoon cinnamon
  • 0.5 teaspoon kosher salt
  • 1 cup plain Greek yogurt
  • 0.5 cups pure maple syrup
  • 0.33 cup extra virgin olive oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1.5 cups fresh blueberries
  • 1 tablespoon all-purpose flour (for tossing blueberries)
  • 12 tablespoons granulated sugar (for sprinkling on top, optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a muffin tin or line it with muffin liners.
  2. In a large bowl, whisk together flour, baking powder, baking soda, cinnamon, and salt.
  3. In another bowl, mix Greek yogurt, maple syrup, olive oil, eggs, vanilla extract until smooth.
  4. Combine wet and dry ingredients gently until just mixed.
  5. Toss blueberries in a tablespoon of flour before folding into the batter.
  6. Fill muffin cups about three-quarters full and sprinkle sugar on top if desired.
  7. Bake for about 20 minutes or until golden brown and a toothpick comes out clean.
  8. Cool in the pan for five minutes before transferring to a wire rack.
